Peanut butter-coconut balls

A little treat to satisfy any cravings, that can be kept in the freezer for a dark day and in need of a little pick-me-up. I personally haven’t kept them longer than a week or two, frankly because there have never been any left for that long.

  • 4 dl desiccated unsweetened coconut
  • 1 dl cocoa powder
  • 1 dl coconut fat (used extra virgin)
  • 1 dl agave or  yacon syrup
  • pinch of sea salt
  • 1/2 tsp vanilla extract
  • 3-4 tbsp peanut butter
  • 1 tsp cinnamon *optional
  1. Mix all the dry ingredients together in a bowl
  2. Add the coconut fat and mix it (with your hands) until there are no bits left
  3. Add the preferred syrup and vanilla extract, and blend it well together
  4. Stir in the peanut butter. Taste if more peanut butter is needed/wanted
  5. Roll the batter into small balls and let set in sealed containers
  6. Put them in the freezer and serve when they are set firmly and cold
